Dining Room • Hangzhou

The Park Hyatt Hangzhou is located in the Qianjiang New City Central Business District and just 20 minutes by car from the famed West Lake. Its premier restaurant Dining Room serves Zhejiang and Cantonese cuisines. On one entire side of the level 37 outlet, reinforced glass rises 5.2 metres from floor to ceiling. The food has to soar – which it does – in order to compete with the breathtaking view. 

Dining Room is decorated with over-sized glass lanterns and delicate hand- embroidered silk panels from Suzhou, the Chinese city famed for the fabric. Park Hyatt Hangzhou’s General Manager Peter Zhou is also from Suzhou.

At a young age, Zhou moved to Melbourne. His culinary journey began in 1988 with The Olive Tree, an Italian restaurant in the Australian city. The multi-award winning chef started his hotel career in 1993 at Grand Hyatt Melbourne and then Park Hyatt Melbourne. In March 2002, Zhou returned to China as Executive Sous Chef of Grand Hyatt Shanghai, and then as Executive Chef of Hyatt Regency Hangzhou and, later, Hyatt on the Bund, before going back to Grand Hyatt Shanghai as its F & B Director.

In September 2013, he was made General Manager of Park Hyatt Ningbo. Five years later, in July 2018, Peter Zhou became General Manager of Park Hyatt Hangzhou. In October 2021, Zhou was promoted to Area Vice President Greater China for Zhejiang, Jiangsu, and Anhui Province. Since 2013, Zhou has been President of the China Delegation of Disciples of Escoffier.
