
There are 11 Bing Sheng restaurants in Guangzhou. The 168 Tianhe East Road outlet we are recommending is in a modern district called ‘Tianhe’ or, literally, ‘Heaven River’. The skyscrapers here include international chain hotels, office buildings, and shopping malls.
Founder Proprietor CAO Si Biao came out from a village to work at 16 years young. The family was very poor. He started with odd jobs selling things to slightly less poor workers.
In 1996, Cao opened Bing Sheng as a little stall. Business was passable. However, at one stage, it got so bad the young man considered closing the stall altogether. Cao persevered and launched a signature dish so he could stand out from the crowd.
This is the labour-intensive Shunde Raw Fish. Ultra fresh, very fine slivers of fish would be dipped in a sauce that includes peanut oil, ginger and shallot. The inspiration was a hit and Bing Sheng became identified with Shunde Raw Fish, even though Cao does not come from that county but another part of Guangdong.
Since then, other specialities have appeared including two different versions of Barbecued Char Siew Pork. One is sweet and the other a very exclusive part of the pork belly which is practically all fat. The skin, though, is razor-sharp crispy. This insane Char Siew is found nowhere else.
