Located in Hong Kong’s historic Pedder Building in the heart of Central, Club Bâtard stands as Asia’s premier private members’ wine and dining club. Spanning 18,000 square feet across three luxurious floors, this exclusive sanctuary is driven by the bold vision of co-founder Randy See.
A veteran of Singapore’s fine dining scene, Randy See was Head Sommelier of 3-Star Michelin restaurant Les Amis in Singapore, where he was voted Sommelier of the Year at the World Gourmet Summit for three consecutive years. He later served as Director of Operations, playing a key role in the group’s overseas expansion into Hong Kong, relocating to the city in 2008.
In 2019, Randy See partnered with wine merchant The Fine Wine Experience to launch the original Bâtard restaurant in Sai Ying Pun, Hong Kong. After closing that location, the entire team relocated to the iconic Pedder Building, transforming the brand into Club Bâtard, which opened in September 2024.
Frustrated by inflated restaurant markups, See introduced a revolutionary concept to Club Bâtard: refined French cuisine paired with premium wines sold strictly at retail prices—no markup.
The idea was simple yet groundbreaking. Diners could enjoy rare Burgundies and Bordeaux at savings of 60–70% compared to typical restaurants.
The response was immediate and overwhelming. Club Bâtard’s membership quickly reached its cap of 1,200, proving See’s concept.

At the heart of Club Bâtard is a spectacular three-storey, glass-fronted wine cellar housing over 10,000 bottles. Members can browse and enjoy any bottle at retail price—from everyday classics to a rare Chateau Latour (Ex-Chateau) 1898 en magnum priced at HK$350,000 (US$44,660).

The club features four distinctive outlets:
Bâtard
Offering French cuisine, Bâtard closed its Sai Ying Pun restaurant and fully relocated its operations to Club Bâtard, now occupying the entire second floor of the Pedder Building. With 108 seats, the restaurant has 2 private dining rooms that overlook the open kitchen.
Hop Sze
Offering a renowned down‑to‑earth approach to homestyle Cantonese dishes, Hop Sze closed its Sai Wan Ho restaurant and fully relocated to Club Bâtard, now occupying the third floor of the Pedder Building. The entire team has seamlessly transitioned to this new space. Hop Sze offers 88 seats, including 6 private dining rooms.
Le Clos
Occupying the entire first floor of the Pedder Building, Le Clos serves Asian and Western culinary favourites inspired by France’s walled vineyards, or clos. Open day and night, it caters to members with breakfast, lunch, dinner, bar drinks, and late‑night snacks.
OBE Whisky Bar
Taking its name from the Old Bottle Effect (the natural ageing that occurs inside a whisky bottle as the liquid slowly rests after years of maturation in oak casks), this 35-seat bar on the third floor of the Pedder Building offers an unparalleled selection of whiskies by the bottle and glass.
