Shang Palace • Paris

Situated in the 16th arrondissement, the Shangri-La Paris was the private mansion of Prince Roland Bonaparte, whose grandfather Lucien Bonaparte was the younger brother of Napoleon. Dating back to the 19th Century, some of the rooms and suites of the hotel have views of the Eiffel Tower. 

The first Shang Palace in Europe opened in Paris in September 2011. The restaurant’s Tang and Qing Ming private rooms can seat 12 and 24 respectively. In September 2024, Shang Palace installed a new chef following the departure of Hong Konger Samuel Lee (who joined in 2015).

Tony Xu, 36, hails from Chengdu and had previously worked for the group. In 2007, he joined the Shangri-La Chengdu as a chef de partie before rising to become chef in 2010. His last previous appointment was as chef of The House Collective’s Mi Xun Teahouse in Chengdu which earned a Michelin star for his Sichaun-inspired vegetarian cuisine.

Xu grew up alongside his grandmother and helped her prepare meals for family celebrations. That set the path for his culinary journey as at just 11, he took a course in cooking. 

“The most moving moment of my career was when my grandmother came to taste the cuisine I had entirely imagined (at Mi Xun Teahouse), which earned me my first Michelin star. That award is also for her, for the early lessons she taught me, for the passion for taste that she passed on to me.”
