

Since its opening in 1982, Summer Palace has stood at the forefront of Cantonese fine dining in Singapore. Located at Conrad Singapore Orchard, the One-MICHELIN-Starred restaurant remains one of the country’s most revered Chinese dining venues, having held its star since first entering the Singapore Michelin Guide in 2017.
At the helm of the kitchen is Executive Chef LIU Ching Hai, a Hong Kong-born chef with over 30 years of culinary experience. His career spans more than two decades across Southeast Asia, bringing a wealth of expertise and a deep understanding of regional flavours to Summer Palace.


Complementing the exceptional cuisine is a beverage programme of equal distinction, curated by Sommelier Agustinus Reynaldi Salim, who joined Conrad Singapore Orchard in May 2025. A second runner-up at Indonesia’s Best Sommelier Competition 2020, Salim brings with him valuable experience from Indonesia’s vibrant hospitality scene.
Summer Palace’s By-the-Glass List features a carefully selected range of 10 wines, including sparkling, Champagne, whites, and reds from France, China, Spain, New Zealand, Australia, and Italy, offering guests a well-rounded journey through some of the world’s finest wine regions.
