The Palmer Canteen

Nestled beside the renowned Chateau Palmer, the Palmer village is a hamlet of pale stone buildings and verdigris shutters, bordered by gardens and herbaceous beds. 

Built in the 18th Century with traditional Médoc architecture, it was designed as an autonomous living area for the rural community that kept the estate running. 

An architectural project launched in 2020 reimagined the village’s functions, creating a closer connection to the vineyard. The boot room serves as a reception area, the historic stable has become a herbarium, offices are hosted in a former wine storehouse and, at the very centre, the Palmer Canteen welcomes the teams every lunchtime.

Born in Landivisiau, Finistère, Jean-Denis Le Bras’s passion for good food and local produce was first nurtured by his grandfather, a former cook. From 2007 to 2022, he pursued Michelin-starred excellence alongside the celebrated chef Pierre Gagnaire, working across locations from St. Barth’s and London to Hong Kong and Bordeaux (where he led La Grande Maison de Bernard Magrez for four years). In 2023, he joined Chateau Palmer as its Executive Chef

“Our ambition is to reach out to the locals, to make them realise that the Palmer Canteen is a place that brings people together and nurtures them,” said Thomas Duroux, Director of Chateau Palmer

Guided by the seasons, Chef Jean-Denis Le Bras creates his signature style of refined yet approachable cuisine. His menus might feature rustic terrines and pickled vegetables from the garden, carrots grated with fresh herbs, a well-balanced celery remoulade, red wine-poached pears, or generous casseroles meant for sharing. 

The Palmer Canteen offers a daily set lunch menu for €24 per person, served from 12:15 pm to 1:00 pm, Monday through Friday. Reservations can be made by phone at +33 (0)5 57 88 72 72 until 11:00 am on the same day.
